I wanted to tag in @Megan Arnett who is the Executive Director for the Berkeley Center for Green Chemistry and their Graduate Solutions course, which reminded me a bit of this (students working in teams with industry partners on case studies of green chemistry innovations). Even though it's at the graduate level, I feel like there are a lot of parallels. Megan, any thoughts on this? (you can also check out Megan's "Ask Me Anything" forum happening right now, there are likely some relevant discussions in there too). Also wanted to tag in @Deborah Bromfield Lee and @Monica Soma Hensley who might have some insights (or even know of others who may have tried similar approaches in their courses).
